Successful Louisville restauranteur and owner of Varanese Restaurant, John Varanese had a vision for a 27,000 SF two-story metal building on the bank of the Ohio River and was the former home to a boat storage business. His first two riverfront endeavors in the facility, utilizing the entire first floor, were River House Restaurant, and adjacent, The Levee bar and lounge. Both boast outdoor bars, lounges and dining spaces.

In 2019, Varanese engaged Schaefer to build out the entire second floor of the building, which would house Savor, a large modern-appointed event venue, as well as a separate Wine Dining Room overlooking the river, and much-needed administrative space for the three businesses.

Working closely with architect, interiors team and engineers, the final space exceeded client expectations and has been an extraordinary addition to the Varanese family of restaurants.
